Monday March 8th 2010 Vegetarian Class

OK here's what I'm thinking for Monday's class:
I think we'll make groups and work together to make 4 recipes because there is 4 stoves. Everyone in the class has been helping so much so it is going great!!

So here are ideas for the stations:
1. Creamy Broccoli Soup (from our sister blog www.vegannyc.blogspot.com)
2. Artichoke-Bean Dip and Mochi for dippin
3. Cornmeal-Chile Crusted Tofu battered and fried tofu with BBQ dippin sauce
4. Dessert (it will either be blueberry cobbler or rasberry chocolate cookies)

Since everyone is usually in the class by 7:10 that's when the cooking will begin
(so nobody misses out on the fun)
Before that I would love to hear suggestions or if you've been trying anything at home etc.

Review of Cooking Class

Ok so it is all a blurrrr... I think it went well and the 2 hours flew. I demonstrated a white sauce which we poured pasta with sauteed mushrooms and spinach.. I plan on getting the recipes up here and I thought I could do pictures but was rushing through the class didn't even snap any photos. We made a simple and delicious dressing from Engine 2 Diet

Dressing:
whisk in small bowl
3 Tbsp Vinegar (we used Balsamic)
2 Tbsp Mustard (we used yellow)
1 Tbsp sweetener (we used agave)

3,2,1, lowfat yum!

we also made a smoothie but by the time we got to it, the berries were not so frozen anymore. Will have a more decadant desert next monday =-)

SIMPLY VEGETARIAN COOKING CLASS

I'm so excited that tomorrow will be the first day of teaching an adult continuing education cooking class in Westhampton Beach. It's going to be a lot of fun and I plan to be posting all the info on the recipes, books, and videos that are used. It is going to be on Monday nights for the next 5 Mondays from 7 to 9pm.

Washington D. C. Climate Change Conference
